Pyrizhky (hand pies) with potatoes

Pyrizhky are traditional Ukrainian baked buns with a filling inside. The fillings can be sweet or savory - potato, cabbage, meat, mushrooms, berries, or even jam. You can use any filling you like, but here I describe the potato one.

Instructions

Step 1 / 10
Mix the yeast, warm milk, 1 tablespoon of sugar, and 4 tablespoons of flour (from the total amount). Leave for 20 minutes.

Add 2 eggs, oil, the remaining sugar, and salt. Mix.
Step 3 / 10
Gradually add the flour, kneading well. The dough should be soft and not stick to your hands.

Leave the dough to rise for 2–3 hours.

For the filling, boil the potatoes until tender. Finely chop the onion and sauté until golden.

Drain the potatoes and mash them. Add the sautéed onion, salt, and pepper to taste.

Take a piece of dough (50–60 g), roll it into a circle. Place 2 heaping tablespoons of filling in the center. Pinch the edges well and shape into a pretty oval.

Place the pyrizhky seam side down on a baking sheet.

Beat one egg and brush the pyrizhky.

Preheat the oven to 200°C (390°F). Bake the pyrizhky for 20 minutes.

Neutral vegetable oil – 100 g
