## Ingredients

- Whole chicken: 2 kg
- Onions: 2 large
- Butter: for frying
- Walnuts: 3 glasses (about 250 g)
- Vinegar (plus extra to taste): 3–4 tbsp
- Eggs: 3
- Flour: 3 tbsp
- Garlic: 2 cloves
- Satsivi spice blend (blue fenugreek, khmeli suneli, Imeretian saffron): 3 tsp
- Black pepper: ½ tsp
- Ground coriander: 3 tbsp
- Ground cloves: 1 tbsp
- Broth (from cooking the chicken): 3 l

## Method

_8 steps_

1. Boil the chicken in a 6-litre pot until cooked through. Add the two large onions and keep cooking until they break down.
2. Cut the chicken into portions and fry in butter until browned.
3. For the sauce, made for 3 litres of broth: grind the walnuts in a meat grinder or blender, add the vinegar and let it stand.
4. Add the eggs and flour to the walnuts and mix well.
5. Gradually pour the warm broth into the walnut mixture in a large pot. Add the chicken, bring to a boil and turn off the heat.
6. Once the satsivi has cooled slightly, add the finely chopped or pressed garlic.
7. Add all the spices and vinegar to taste.
8. Bring to a boil again, let it cool completely and serve cold.
